This recipe for blueberry coffee cake, topped with brown sugar crumbs is an easy one. This simple yet scrumptious blueberry coffee cake can be served as a quick dessert or as a snack. The added flavors of the brown sugar crumb toppings and butter give this cake an edge that can’t be resisted. The perfect companion to your favorite cup of Grim Bean Coffee.

You can use either fresh or preserved blueberries for this simple recipe, or the preserved/frozen blueberries. You will need:

  • 4 tablespoons butter (room temperature)

  • 3/4 cup granulated sugar

  • 1 large egg

  • 1/2 teaspoon ​vanilla extract

  • 2 cups all-purpose flour (9 ounces)

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1/2 cup milk

  • 2 cups fresh blueberries

For the topping:

  • 4 tablespoons butter (room temperature)

  • 1/2 cup packed brown sugar

  • 1/3 cup all-purpose flour

  • 1/2 teaspoon ground cinnamon


  1. Pre-heat the oven to 375 F. 

  2. Take a 9 inch baking pan and grease it.
  3. Next, take a mixing bowl and with an electric mixer, mix 4 Tbsp of butter with ¾ cup of granulated sugar. Now, add the eggs to the mixture, along with vanilla extract and beat well, until smooth.

  4. Mix together flours, baking powder, salt in a bowl and add the this flour mixture to the mixture created above in step 2.

  5. Add ½ cup of milk to the mixture. Beat it until smooth.

  6. Now, gently fold fresh/preserved blueberries into the mixture.

  7. Spread the mixture into the baking pan you greased in step one.

  8. Combine the toppings together, and blend them till they form crumbs.

  9. Sprinkle these toppings onto the mixture in the pan, and bake for 30-35 minutes in a pre-heated oven.
